To all,
We have been using the Japan Wine as well as the Hotel Reservation example many times in the past.
Our experience is that both are too long to keep the attention and lack certain modeling features.
In the last three months we have been using the attached Nobel Prize Foundation use case. This is in our experience the best example for starting in conceptual modeling (or ontology engineering).
